Preheat oven to 325°F. Line baking sheets with parchment paper.
Combine flour, salt and baking soda together in a mixing bowl. Set aside.
Combine butter and both sugars in a mixing bowl. Beat together until well combined. Mix in egg, egg yolk and vanilla. Add dry ingredients and mix just until combined. Stir all of the candy into the cookie dough until just combined.
Drop heaping tablespoons of dough onto prepared pans, spaced two inches apart. Bake for 11-14 minutes. The edges of the cookies should be golden brown, but the centers should look soft and puffy.
