Parmesan Cheese Puffs
    Parmesan Cheese Puffs


    Servings: 10
    Prep Time: 10 minutes
    Frying Time: 3 minutes per batch
    Start to Finish: about 25 minutes
    Times are approximate


    2 egg whites
    1 cup grated Parmesan cheese
    5 cups oil for deep frying

    Suggested Items:
    Deep-Fryer OR Heavy Pot
    Electric Mixer OR Whisk
    Slotted Spoon
    Paper Towels


    Heat oil in a heavy pot or deep-fryer to 375°.

    In a medium glass or metal bowl, whip egg whites until they just hold a stiff peak. Fold in Parmesan cheese until evenly distributed.

    Form level teaspoons of batter into balls.

    Fry balls a few at a time, turning once until crisp and golden.

    Using a slotted spoon, remove puffs from oil and place onto paper towels to drain.

    Yield: 20 puffs; Serves: 10
